In this article I'm am going to share with you my secret method for making the perfect poached eggs. I love a good poached egg especially on a lazy Sunday morning when the kids telly is on and there's no chores to worry about! My girlfriend used to only eat scrambled eggs and since she tried my poached egg method she can't get enough of them. Have a little try I promise you won't regret it!

What you will need:

A kettle
A shallow frying pan
Boiling filtered ideally sift water
A little oil
A pinch of Salford
A drop or two of wine vinegar.
Salt Abe pepper fir seasoning
A plate
A slotted spoon.
Free range organic fresh eggs works best

Method:

Boil the water in a kettle and then add to the shallow frying pan. Keep the water boiling and then add the wine vinegar, oil of your choice and the salt. Carefully crack the eggs and slowly leak them into the frying pan full of boiling water. If you want try this - swirl the water first to create a whirlpool effect this gibes you a rounder poached egg. Leave the eggs in the water for approximately 2-3 minutes until the white has gone solid and the York is in between solid and soft but sill runny. Carefully remove the eggs with a slotted spoon and place in a plate with tissue to drain excess water. Season with salt and pepper. Done! Goes great with some nice rustic white freshly baked loaf and lots of good quality ketchup. I also love to fry up some tasty mushrooms in garlic butter until they go golden crispy and then season with lots of black cracked pepper and salt crystals. Make sure to serve with a nice cup of tea too!

Fajita is generally beef, chicken, pork or shrimp grilled and served on a flour tortilla with condiments. The chicken is worked with onions and bell peppers. Fajita is served to the table sizzling loudly on a metal platter with tortilla and condiments on the side. Making your lips watery?

Texans would love to take credit for giving the world fajitas but the honor goes to south of the border, Vagueros, who learnt the art of cutting tough beef into skirt steak. Fajitas are basically Tex Mex dishes. Nowadays Fajita is almost anything cooked and wrapped in a flour tortilla. Only true fajitas are skirt steak.

The preparation of Fajitas starts with marinating the beef using limejuice to tenderize at least for 24 hours. Well, there are no set rules for marinating; you can use your creative sense for that, but don't forget to use limejuice. To marinade beef or chicken, you can use the Ass Kickin Soakin' and Grilling Sauce. This would bring a true Mexican flavor.

Fajitas are real fun to eat, and here are the ways to cook the best Fajitas, namely:

Grilling an exciting fajita
Traditional method for cooking fajita is over coal for approximately 6 minutes on both sides for skirt steaks around one pound. After the meat gets cooked, you should let it rest for a few minutes and cut it across the grain diagonally in to finger length strips.

Oven broiling fajitas
Broil the meat 4 inches below the flame for about 6 minutes on both sides. Then you can let it rest for a few minutes and slice it diagonally in to finger length strips.

Pan frying fajitas
Drain the meat and cut it across the grain in finger length strips and fry over high heat for not more than 1.5 minutes turning frequently. Roll them in flour tortilla. Choose thick tortillas available in any supermarket. Warm them up by sealing in foil packages, 6-8 at a time. On a frying pan, add few tablespoon of olive oil, cut one large onion and separate into rings and cut bell peppers into strips. Add them to the frying pan and stir fry. Serve with stir fried onions and bell peppers.

Some specialized fajita preparations are Pico-de-gallo, guacamole, Fajita on a stick, Fah-HEE-Tah, Beef Fajita Marinade and many more. Here are a few, which I find interesting, but you can always add your magic touch to them:

Pico-de-gallo
This fiery and flavorable salsa is like any other salsa but the ingredients are finely chopped. If rightly made it is hot. Since people make it to their liking they can control the heat.

Guacamole
Cool and buttery smoothness of guacamole adds the finishing touch on a fajita. Experiment your ideas on it and get it right. My suggestion is to select the right Avocado of Haas variety with brownish-black skin with a pebbly texture.

Fah-HEE-Tah
Traditional skirt steak has to be marinated for long 24 hours in limejuice, red capsicum and garlic. Cooked meat is cut into strips and them wrapped in a warm tortilla and garnished with salsa or guacamole.

Fajita On A Stick
Soak 8-9 bamboo skewers for 10 minutes. Trim fat from steak and cut crosswise into ½ " thickness. Thread equal amount of beef weaving back and forth onto skewer. Combine dressing and lime juice. Brush on beef peppers and onions. Place vegetables on grid for 15 to 20 minutes. Remove and add beef to the centre. Add salt. When ready, serve beef and vegetables in tortilla with salsa.

Beef Fajita Marinade
Combine limejuice, tequila, crushed dried oregano leaves, cloves of garlic, minced fresh cilantro, ground cumin, ground black pepper. Mix well and pour marinade over meat, refrigerate overnight or even 24 hours in zip top bag. It makes enough marinade for 1 ½ pound flank steak.

Fajitas are terrific for informal dinner party. It is inherently festive or goes hand-in-hand with margaritas or Mexican beer and Tex Mex treat. Good Luck! Taste your own Fajitas, don't go for the restaurant version of Fajitas.

Here are two recipes for main dishes your family will love and you can get on the table quickly and easy. One uses chicken and one uses ground beef for variety. The Quick and Easy Chicken Pasta goes together quickly with a jar or can of sauce from the grocery store. Choose your favorite pasta type or perhaps one that is a favorite of the young ones in your family. With a green salad and crusty bread, you have a meal in minutes. Meatballs Stroganoff is another way to use budget-stretching ground beef to produce a tasty entree.

    QUICK AND EASY CHICKEN PASTA
    1 lb boneless skinless chicken, cubed
    salt to taste
    black pepper to taste
    2 to 3 tablespoons flour for coating
    2 tbsp canola oil
    1 can or jar of Chunky Italian Ready Sauce
    Your favorite hot cooked pasta for 4

    Put the flour, salt, and pepper into a bag. Add chicken cubes and shake until all chicken is coated.

    Heat the oil in a large skillet over medium-high heat. Brown the chicken well on all sides until no longer pink. Add the sauce to the skillet and simmer until heated through. Serve over your favorite pasta.

    MEATBALLS STROGANOFF
    1 1/2 lbs lean ground beef
    1 egg
    1 tbsp diced onion
    3/4 cup dried bread crumbs
    1/4 tsp pepper
    1/2 tsp salt
    2 tbsp canola oil
    1/2 lb sliced fresh mushrooms
    1 1/2 cups water
    2 tbsp all-purpose flour
    1/4 cup cooking sherry or wine
    1/2 tsp paprika
    1 cup sour cream
    Hot buttered noodles, optional
    parsley for garnish

    In a large bowl mix the ground beef, egg, onion, bread crumbs, pepper and salt. Shape mixture into 1-inch meatballs. Heat the oil in a large skillet and brown the meatballs well on all sides; remove to a bowl when browned.

    Discard fat from skillet except for 2 tablespoons. Add the mushrooms to the reserved drippings and cook until tender, about 5 minutes. Blend the water and flour until smooth. Return the meatballs to the skillet with the mushrooms. Stir in the flour/water mixture, sherry, paprika, and 1/2 tsp salt. Heat to boiling, reduce heat and simmer mixture for 10 minutes. Stir occasionally during the cooking time. Stir in the sour cream and heat thoroughly but do not boil.

    Serve over the hot buttered noodles and garnish with a sprig of parsley, if desired.

    Working out how to barbecue an egg has become a bit of a family conundrum for me and this is why:-

    It all started one drunken afternoon way back in the 1970's when my Uncle Harold bought a new oven for his ultra modern kitchen. Of course, me being a very young lad was completely oblivious to what went on next.

    The new oven came complete with a very fashionable spit roaster and after my uncle had proudly explained everything about the appliance, more beer was consumed and the conversation turned to what type of food could be spit roasted. The obvious one was spit roasted chicken and I'm happy to say that this method of cooking chicken is as popular today as it was then, but as the drunken silliness prevailed on this occasion, the question then to be answered by my Uncle and my Father was whether it was possible to spit roast an egg.

    Fortunately on that day there were only half a dozen eggs or so in the house so there could only be half a dozen or so failed attempts before the females of the house could restore a modicum of sensibility to the afternoon. The days event have been recounted on many family occasion and of course it's led me to think a little more about how you can grill an egg on the outdoor barbecue grill.

    Boiling an egg is just about applying heat to the shell at a continuous temperature for a period of time so it must be possible to do the same on a charcoal BBQ grill. The problems are understanding the temperature of the grill and the fact that you can't apply the heat all over the egg at the same time. When boiling, the heat is standard at 100°C so you can approximate how long to cook it for, the only variable being the size of the egg. I've tried to grill an egg in its shell and for me, it doesn't work. After giving it plenty of time, I cracked the top only to find the white still needed more time to solidify. Having said that, I left the egg on the grill and gradually it cooked and I was able to eat and very tasty egg but to be honest it left a bit to be desired on the presentations stakes.

    The best way is to mimic the frying process and cook the egg in oil. Slapping a frying pan on the grill isn't quite cricket and a ground base will take forever to warm through so I try to make it a little more fun. I make small individual foil trays that will hold one egg each, just fill the tray will a little oil and crack the egg. Heat transfers well in foil and you can see exactly when they're done so you get the perfect egg every time and the individual little trays add for the fun element.

    If you're in the party mood try making your foil trays in different shapes, after all, not many people have had a triangular shaped fried egg have they and what better way to round it of than with a homemade BBQ sauce?

    Here is a delicious and nutritious breakfast you can serve using hard-boiled eggs:
    Creamed Eggs with Ham
    Ingredients:
    ¼ c green onion, sliced
    1 c ham, cooked and cut into julienne strips
    ¼ c green bell pepper, chopped
    ¼ c red bell pepper, chopped
    4 hard-boiled eggs, sliced
    2 tbsp flour
    2 c milk
    1 ½ c asparagus, cooked and cut to 1in/pc
    Cooked rice (hot) or puff pastry shells (baked)

    Procedure:
    1. Using a large skillet, place it on top of medium-high heat.
    2. Put some margarine or butter. When it is already hot, cook some ham until it becomes lightly brown.
    3. Add the bell peppers and onion, stirring intermittently.
    4. Once the vegetables become tender, you can add the flour and continue stirring.
    5. Once the flour is absorbed completely, showcasing a smooth mixture, you can now remove the pan from the stove.
    6. Pour some milk, small amounts at-a-time while still stirring it constantly.
    7. Once it becomes smooth and thick, add the asparagus and eggs. Place them onto the skillet, and then, reheat it.
    8. You can serve this with puff pastry shells or cooked rice.
